India has a long history of using monsoon winds to process coffee. During the 16th century India was one of the major coffee producers in the world, and under British rule. Coffee cultivation and trade was a significant economic activity, and many ships brought raw coffee beans across the Indian Ocean on a six-month sail around the Cape of Good Hope to bring raw coffee to Europe. During the monsoon months, the exposure to constant humid conditions blowing across the Arabian Sea caused the beans to undergo characteristic changes, both as beans, and in the finished cup.

Today, once the coffee beans are dried to a certain level, they are exposed to the moisture-laden monsoon winds that blow in from the Arabian Sea. The beans are stored in open-sided warehouses, allowing the humid winds to sweep through and around the coffee beans. This exposure lasts several weeks and mimics the experience the beans had on trade ships of the past.

Harvesting & Processing

India's Monsoon Malabar coffee beans are processed in a very unique way. The harvested coffee beans are exposed to the monsoon rain & wind for a period of 3-4 months, causing the beans to swell and lose the original acidity. This results in a practically neutral pH balance.
